For an interesting contrast, compare this sea salt to Maldon Salt or Jacobson Salt, both of which are amazing, beautiful flaky salts. San Juan Island Sea Salt is more granular, because it's very difficult to produce flaky sea salt by solar evaporation. Jacobsen and Maldon produce their salts by boiling seawater which allows them to control the crystallization but is much more energy intensive than evaporation. San Juan Sea Salt is similar in consistency and minerality to Celtic sea salt.
